Across the nation teachers are preparing for a new school year by consulting with colleagues, attending workshops, researching topics, rearranging classrooms, reading—lots of reading and writing plans that will tap students’ intellectual and creativity capabilities.

On this Teacher’s Day, take time to thank an educator by baking moist and delicious Coffee-Break Cookies.  These tasty morsels are packed with power and perfect for a much-needed coffee break.


Coffee-Break Cookies
¾ cup butter
1-cup brown sugar
½ cup white sugar (scant)
2 eggs…beat
¼ cup water
1 tsp. vanilla
1 cup enriched flour
1 tsp. salt
½ tsp. soda
1 cup chopped nuts
1 cup dried apricots or raisins
1-cup wheat germ
3 cups oatmeal, uncooked
Cream butter, sugars, vanilla, water and eggs together.  Add flour, salt, soda and blend well.  Stir in wheat germ, nuts, fruit and oatmeal.  Drop by teaspoon onto greased cookie sheet.
Recipe makes 5-6 Dozen…..Bake at 350 for 8 minutes

**Busy, multi-tasking teachers will probably read a few papers while the cookies bake.
